چکیده

Saponins from the seeds of C sinensis var. sinensis (tea seed saponins) have been well investigated. Their sapogenins, theasapogenols A, B, C, D, and E, were isolated and identified by Yosioka et al.i-3) Two major tea seed saponins, theasaponins Ei and E2, have also been recently determined,4) Saponins from the leaves of C sinensis var. sinensis (tea leaf saponins) were first studied by Machida in 1938,5) and Hashizume and Sakato then demonstrated that tea leaf saponins were difTerent from tea seed saponins.6} The constituents Qf tea leaf sapoins were reported by Hashizume as fbllows: sapegenins, barringtogenol C (=theasapogenol B), camelliagenin A, R,-barrigenol, and A,-barrigenol; component sugars, glucuronic acid, galactose, xylose, and

Isolation of An Aroma Precursor of Benzaldehyde from Tea Leaves (Camellia sinensis var. sinensis cv. Yabukita).

The cyanoglycoside, prunasin, was isolated for the first time as an aroma precursor of benzaldehyde from fresh tea leaves (Camellia sinensis var. sinensis cv. Yabukita). Prunasin was readily hydrolyzed by a crude enzyme prepared from the fresh tea leaves to liberate benzaldehyde. The isomerization of prunasin under neutral conditions was also recognized.
